Preparation and Usage
You Will Need:
For the sponge:
2 medium eggs
70ml (4 tbsp) milk
100g soft margarine
For the icing:
30ml (2 tbsp)
Warm water
Get Baking!
Pre-heat the oven to 180°C / fan 160°C / gas mark 4. Assemble your baking tray following the instructions. Do not grease the tray.
Mix together in a bowl the baking mix, eggs, milk and soft margarine. Then whisk (by hand or using an electric mixer on medium speed) for 2-3 minutes until the mixture is smooth and creamy.
Pour the mixture evenly into the prepared tray.
Bake in the middle of the oven for 20-25 minutes or until a skewer, inserted fully into the centre of the sponge, comes out clean.
Remove from the oven and leave to cool for 10 minutes.
Now make up your icing by mixing together the icing mix and 30ml warm water. Pour over the top of your traybake and spread evenly. Allow to cool completely, cut into 12 portions and serve.

You Will Need:
Lemon Icing mix
60g butter
25ml (2tbsp) milk
Once your traybake has cooled make up your buttercream by whisking together the icing mix, butter and milk until light and fluffy. Spread evenly to cover your traybake and cut into 12 portions.

lovely
Great taste and so easy to make. Perfect for a quick and easy cake!
Not gluten free but that is hidden.
I have now bought this because when you read the first instructions it only mentions things like nuts ,eggs but only if you read almost to the end of the write up ,and only then does it give a full disclosure of ingredients. In my opinion allergens should come first - I am Coeliac and am allergic to gluten which is found in wheat,and other grains unfortunately because ordinary flour is relatively cheap more and more I find what used to always be genuine ingredients in curries for example gram flour which is gluten free costs more Its really disappointing to find Dr Oetker products that have wheat flour as one of its main ingredients I used to be able to trust Dr Oetker to be really open and honest with the public after all my disease creates long term affects that prevent my intestines being able to function properly ensuring that all the vitamins and minerals that I try to take in my food but if I eat gluten in any way my bowel cannot function properly .
Lovely and convenient tray
Moist cake! We added a lot more water to the icing and used butter for the cake but was very easy to use. Love the tray addition

Really easy to make and tastes better than many other shop bought cakes. Light fluffy and tastes as expected. Instead of water I make the icing with lemon juice for an extra zing. Of course homemade from scratch it is not but sometimes this just hits the spot and is satisfying acceptable as an alternative. I have tasted other flavours of cake mix from this brand and they are all lovely. Hopefully in future Ocado will stock a wider range.
Exceeded expectations
I wasn't expecting much from this kit, but the cake turned out light and fluffy and the icing was lemony enough without being overpowering. The only things I changed were to use unsalted butter instead of margarine and I added 60ml of milk instead of 70ml (on the basis that 1 tablespoon = 15ml). In order to avoid a messy worktop when icing the cake, I left it to cool down for 15 minutes then iced it in the tray and then left it until the icing had set before peeling down the sides of the tray and slicing it. As this was part of my contribution to a cricket tea, I sliced it into 24 squares. The proof of the pudding (or cake in this case!)? Well, they all got eaten, so I will be buying again for the next match.
Lousy
Not sure why everyone else is raving - made it this morning and I'll be chucking the rest away. It's got a strange taste and bears zero resemblance to the picture on the packet. The cake is darker and the icing is not thick like that but practically translucent and sinks into the cake or runs off the sides so you have to wipe it off the worktop. I'm binning the second packet I've got. And given all the ingredients you have to add you might as well just get a bag of flour out of the cupboard and make your own.
