Our sea bream is from Turkey, and the team here work closely with the ASC to make sure every pack of fish with my name on it has been sourced responsibly. At Fish Said Fred, that's a non-negotiable. And the fact that it's so healthy is just a bonus. The NHS recommends eating two portions of fish a week, but why stop there? I could eat it every day! And pretty much do.

Instructions
1 Remove all packaging. Heat 1 tbsp of oil in a frying pan over a medium heat.
2 Place your fillets in the pan, skin-side down, and cook for 3 mins.
3 Flip, cook for 3 mins on the other side.
4 Add the butters to the pan for 15 secs, then serve.
5 Make sure your fish is piping hot and don't reheat.
Cookers along with the thickness of the fish can vary a bit - this is just a guide.

Storage:
For use-by date see front of pack. Keep in the fridge, below 5°C. Once opened, cook and eat within one day. Don't eat after the use-by date. This fish has been frozen and carefully defrosted, but it's perfectly fine to freeze it one more time at home. If you plan to freeze it, do so ASAP and always before the use-by date. Don't refreeze once defrosted.

Food poisoning
Had a terrible food poisoning. Part of the fillets looked grey part looked white. The smell was OK but I developed food poisoning within a couple of hours. Its farmed fish in Turkey apparently!

Fresh fish, ruined by the sauce
I was drawn to this by a flash sale. The fish was surprisingly fresh and tasty. The sauce - even though I added only half - pretty much ruined it, so I would not bother buying it again. The amount of butter is way too much for such small fillets

Bought this on a flash sale. Two decent sized fillets. Easy to cook and the seasoned butter was a nice touch although next time I might reduce the amount. Very tasty meal. Will definitely purchase again.
Farmed Fish
In the small print on the packet of this fish, it says it is farmed in Turkey. The website says responsibly sourced and that's it. No mention that this is not wild fish, it is actually farmed fish, with all the problems associated with this. What we are actually buying needs to be made much clearer to customers.

Fresh and a good sized fillet. I only use a bit of the butter.
