Coconut Chicken Noodle Bowl
Flavour kit
2 Rice noodle nests
1 Red pepper, sliced
400ml coconut milk
1 Lime
250g chicken, diced into approx 3cm pieces
Optional: coriander to garnish
Simple Swaps
Replace chicken with prawns
Make this vegetarian by using tofu instead of chicken or by adding mushrooms and strips of carrot
Prep time 5 mins
Cook time 15 mins
1 Heat 2 tbsp oil in a large saucepan on medium heat. Fry the chicken for 3 minutes with the curry paste.
2 Add the pepper and cook for another minute.
3 Add the coconut seasoning, the coconut milk and 100ml of water.
Bring to the boil and simmer for 10 minutes or until the chicken is cooked.
4 Meanwhile cook the noodles according to instructions, then drain and add to the pan.
5 Add a squeeze of lime to taste and top with fresh coriander if using.

Surprised!
Bought this as a quick meal maker. Pleasantly surprised how tasty and easy to use. Good spice without being too much. Use less water if you want a thicker sauce. I used 1 chicken breast, thinly sliced carrots, jarred peppers and basmati rice for two people. Lovely 😊
Easy and tastes so good
I usually steer away from meal kits as they can be lacking in flavour, but these surprised me, really fresh tasting and deep flavours. I use vegan salmon or vegan shrimp alternatives which go perfectly, and use up any leftover veg, perfect for an easy end of week meal. Add less water if your prefer a thicker sauce!
Very tasty
I've tried a bunch of these flavour kits and I think this is the best one. It has quite a strong flavour, in a good way... you can really taste the curry paste and all the spices. I personally add two peppers as there isn't much veg otherwise and I don't cook the noodles separately... I just add them at the end and cook them in the pan for a few minutes. I like these kinds of things... they're quick and easy.
