Preparation and Usage
- 1 tbs olive oil
- 1 onion, sliced
- 175g lean bacon, sliced
- 4 skinless chicken breasts
- 125g baby button mushrooms
- 300ml cold water
3 Easy Steps...
1 Pre-heat oven to 190°C, 375°F, Gas mark 5.
2 Heat oil, fry onion and bacon for 5 mins, until golden brown. Add chicken and brown for a couple of mins on both sides. Transfer to a casserole dish and add the mushrooms.
3 Mix seasoning with water and stir into the casserole dish. Cover and cook in the oven for 1 hour, until tender and cooked
Try Something Different: Try replacing the bacon with pancetta or using peeled shallots instead of sliced onions. Ideal with roast potatoes and fine green beans with freshly ground Schwartz Black Pepper.

Very nice
Made this coq au vin added smoked bacon and served with mash and vegetables the sachet had a nice taste
Pretty bland and under seasoned
I was hoping this would be a suitable replacement for Colman's Coq au Vin mix which has been a staple purchase for many years. Although this mix creates a nice thick sauce, the flavour is woeful at best. Aside from a slight taste of wine and hint of rosemary there is little else there. If you're so inclined and like to experiment with your food, you could no doubt give this the seasoning it desperately needs. I'll no doubt do the same with the remaining sachets but unless I find the right balance next time, I won't be buying any more packs.
Delicious Coq au Vin!
This was absolutely delicious! We cooked the chicken slowly and so it was moist and tender; it was practically falling off the bone. We also added large chunks of potato to it and we served it with boiled Basmati rice. I felt that I could have done with having some extra 'sauce' for the rice because it was so tasty but there wasn't much of it. Adding a large quantity of water to the dish might dilute the sauce down so that it becomes insipid. Therefore, next time I might use two sachets and then that I can add peas and carrots as well as potato to the dish. I know that this is not the traditional way to cook or serve Coq au Vin but I like to tweak recipes. It tasted absolutely lovely! This is definitely one of my favourite meals now.
Not for me
Wanted to be a bit adventurous with the meal ideas. I think this is just not for my tastebuds. The background wine flavour/aroma is apparent. It came out looking great but i didn't love the taste. Needs a bit more salt too. I will not be buying this again.
