Preparation and Usage
675g (1 1/2lbs) mixed vegetables (courgettes, red and yellow peppers, onions, aubergines & tomatoes)
2 tbs olive oil
Directions...
1. Pre-heat the oven to 220ºC, 425ºF, Gas Mark 7.
2. Cut the vegetables into 2.5cm (1") chunks, place into a bowl and coat with the oil. Sprinkle over the sachet contents and toss to coat evenly.
3. Spread the vegetables onto a large roasting tray and cook for 30-35 minutes, until glazed and cooked through.
For a little inspiration...
Stir the roasted vegetables into cooked pasta with your favourite salad dressing for a quick and easy pasta salad. Makes a great topping for puff pastry for a delicious vegetable tart.

Easy to prepare in 10mins cook in 25mins.
1. Pre-heat the oven to 220°C, 425°F, Gas Mark 7 (or pre-heat the grill to a medium heat).
2. Cut the vegetables into 2.5cm (1") chunks, mix with the oil and sachet contents. Transfer to a large, flat roasting tin. Spread the vegetables into a single layer.
3. Cook in the oven for 20-25 minutes, or until cooked through (or place under the grill for 15 minutes, turning occasionally)

Something changed in the recipe
Just to echo what the review below says -something has changed with the mix - it's now damp and congealed on opening, unusable, which is a shame as over veg with pasta it was delicious.
one big hard lump
I've been buying this for years to season mediterranean vegetables to make a veggie tart. recently the seasoning has turned into an unusable flat lump. it is very difficult to break up as it appears "chewy". you can't tell.its like this until you tear open the packet. Best before 01/25.
Milk???
Why does a mix for vegetables contain milk??? Known allergen and zero flavour nor recipe requirement for this. Very frustrating.
Family Favourite!
Always make sure have a packet in cupboard as makes a nice addition to veg. I have even used this mix on potato (or sweet potato) & veg pan roast.
nearly 20% sugar
Way too much sugar. Why add any sugar at all?? Nearly 20%!! Would you pour sugar on your med veg? Its ridiculous. I threw it away
Worked great for a tasty veg dish
Used to roast peppers and courgettes and it resulted in a delicious side dish which worked well paired with some seabass and cous cous with leftovers for lunch the next day. It gave the vegetables a tasty flavour. Will definitely buy again!
