Just like his father and grandfather before him, Mr Tummey smokes all our cold smoked salmon the old-fashioned way at Russels smokehouse in Grimsby. Russels is one of just two retail approved traditional smokehouses in Grimsby and like many of the experts there, Mr Tummey has been smoking fish in its 100-year-old chimneys since he was 16 years-old.
Every day, expert fish smokers wearing special kit climb Grimsby's chimneys – up to 10 metres high – to fill and empty them with brine-soaked fish hanging on stainless steel rods called speats. Each chimney has openings at the top and bottom, allowing draughts of cool, fresh air to mingle with the smoke from smouldering sawdust pits beneath them as it rises.
Smoking fish traditionally in this way is an art which takes many years to learn, and is handed down from one generation to another. Fillets are left overnight and an experienced fish smoker can tell when they are ready simply by touch.
