Aubergine and SunBlush® Cherry Tomato Pizza

A hand stretched pizza base, topped with tomato sauce, mozzarella cheese, aubergine, SunBlush® cherry tomatoes, Regato cheese, sprinkled with basil and black pepper.

Inspired by the best pizzerias, we start with a thin, crisp base, oil enriched and stretched by hand. This is covered with a sauce made from crushed tomato and extra virgin olive oil (0.7%), then hand topped with aubergine, mozzarella and slow roasted SunBlush® cherry tomatoes.

Unpleasant aubergine

This really didn't work - I don't know what had been done with the aubergine or perhaps what hadn't which should have been but it had spoiled it as a pizza topping. If you want a good aubergine topped ready made pizza you'll have to carry on preparing the aubergine yourself and adding it to a margarita.

Like Cardboard

We normally enjoy Waitrose pizzas be they meat or vegetarian but this one was tasteless and we gave up eating it. Hardly any topping and we decided the cardboard disk underneath would have been more enjoyable.

Great Pizza

My husband is vegetarian and I usually prefer to eat meat free, yet it is hard to find good, tasty food, especially ready made meals. This was a refreshing change to the usual margarita and plain veggie pizzas.
