Waitrose British Veal Rib Joint

Waitrose veal is supplied by one farmer in East Anglia, who has been supplying Waitrose and Ocado since the early 90's. All the veal we sell is British and comes from calves that are born and reared on British farms. The British calves are reared and housed in well-ventilated buildings with plenty of natural light and straw bedding. They're fed a diet of Milk, Water and Cereal, that produces tender delicate meat. There is a close working relationship between the dairy farmers and beef producers to ensure that male calves from Waitrose milk production are offered a viable outlet in Waitrose Beef and veal production.

delicious slow cook

Thanks to the earlier review I slow cooked this and it was indeed delicious. I browned it first as suggested and then did 5 hours at 125 degrees. Moist, tender and flavoursome meat, strongly recommended.

A treat

Exceptional veal rib joint for roasting makes a wonderful Sunday lunch treat. Don't overcook though as best served just a little pink in the middle.

Beautiful meat

Lovely and tasty tender meat. I've ordered this twice and each time it has been fantatic. This kind of meat needs to be cooked slowly and gently to ensure it stays moist and full of flavour. My advice for cooking..... Season the veal with some sea salt e.g. Maldon but NOT pepper. Heat a large heavy frying pan until it is smoking hot and then add some grapeseed oil and wait until the oil is smoking. Be brave! Then put the veal in to the oil, fat side down and fry for a minute, then turn over to the non-fat side and fry for 20seconds. Repeat this three or four times until the fat has crispened and browned. Meanwhile heat an oven to an ultra low temperature e.g. no more then 60degrees celcius. Put the veal into an oven tray, a little larger than the meat but not too big, fat side up. Cook until the internal temperature of the meat reaches between 55 to 60degrees celcius, which is between 12 to 14 hours of cooking time. Take the meat out and put on a rack over a plate to rest for AT LEAST one hour. Prior to serving you can season with pepper if you wish!

rather surprised first time, doesn't quite say it's on the bone, which it should really make clear. scrapped plans for casserole and roasted it with great success
