Easy and Delicious - like Couscous but Healthier
Saute some chopped onions, then add bulgur and saute until you have a nutty smell. Cover with broth and cook for approx 12 minutes. Fast and delicious! Like couscous but healthier!

Cook's Note Capers are an invaluable store-cupboard ingredient because they perk up so many dishes. Once you have opened a jar of them, however, make sure that you keep it in the refrigerator.

bilbi
Very good bulgur! I make the Lebanese recipe - Sautee an onion, add 2 crushed garlic cloves and when the onions are soft, add one can of tomatoes and a teaspoon of dried basil. After few more minutes add a cup of bulgur and 1,5 cups of some broth, which should be heated in advance, when you start cooking. Stir everything together, leave under a lid on a little flame for 5 mins. Then add one spoon of tomato concentrate, spoon of honey, some salt, pepper and, if you like spicy, also a bit of cayene pepper. Let simmer on a little flame for 25 mins - check if it doesn't run out of liquid. If so - add a bit of water. When ready, take off the heat but let stay under the lid for another 10 mins to soak up all the liquid. Serve with chopped parsley. Buon appetito!
