good flavour and very convenient

before buying this I would buy coriander fresh in large bunches and freeze it myself, but this seems to keep its flavour much better. recommended.

I use loads of this

and many others in the range. I'm surprised at those comments that expect this to a substitute for, and with as good a flavour as fresh coriander. But whenever coriander is required to be cooked, rather than mixed into a salad or used as a garnish, this is a godsend. Marvellous mixed into pasta and rice, especially with garlic oil and crushed salt

practical and tasty

All of waitrose frozen herbs are a godsend, we have these along with all the others in the range. Great for soups, stews, sprinkling, anything really, they defrost so quickly.

OK as a standby

It's not particularly easy to judge and extract what you need, without getting it all over your fingers. I'd rather have the Dorot cubes.

Excellent idea,!

A good idea but be careful you can't buy the same amount of fresh herbs and cut it up and freeze in bags youreself, I tried this and to be honest its better doing it yourself to save expensive bought herbs going off. Doesn't with soft herbs like basil, but coriander, parsley, sage etc are excellent.

Green Curry Paste

Green Curry Paste

This recipe is for green curry paste which can be used to make the green chicken curry recipe. You can buy ready made curry pastes but they never taste quite as good as home made. You'll need a pestle and mortar to pound the paste and you should have sufficient paste for about 6 lots of curries, it freezes really well and making the paste is a great stress reliever. Make sure children stand well back when you dry fry the cumin and coriander seeds but you can still put them in charge of shouting once they start smelling the spices roasting so you know when they're ready to be taken off the heat... Children can help pound just make sure that they don't touch the chillies, if the shallots and chillies make your eyes water wear swimming goggles. It looks daft but it really does the trick. If you make the children wear them as well you'll have a good giggle. If you want to make the paste mild then reduce the amount of chillies by half.
