GAIL's Three Seed Spelt Bread

Hugely healthy, our Three Seed Spelt Bread combines ancient spelt - a more nutritious ancestor of modern wheat - with a nutty blend of sesame seeds, poppy seeds and sunflower seeds that run through every slice. On top, you'll find nigella seeds and fennel seeds too for an extra crunchy and colourful crust.

GAIL's believes in the art of honest breadmaking. We start with just four simple ingredients: flour, water, salt and yeast, and we never add artificial colours or flavours. Instead, we seek out the best ingredients from where they're best, whether it's hand-peeled Bramley apples from Britain, single source unsalted butter from France, or plump juicy olives from Mediterranean groves. All our loaves are made by hand too, so we never need to add the stabilisers and preservatives that are an unavoidable fact of industrialised bread.

Our selection of classic and globally-inspired artisanal breads includes a range of sourdoughs made from 15-year old wild yeast starters. Allowed to rise slowly and naturally, these loaves take 48 hours to make and possess a mature taste and character that a mechanically processed loaf couldn't hope to match.

Gliadin-Free Bread

This is the only bread I will buy when I've run out of spelt flour - gliadin's initial effect may be to over-stimulate your appetite, but at the end of the year it also increases your body mass and your grocery bill! Try this delicious loaf and you'll never go back to opiate-laden bread ever again............

More like a brick than a loaf

I was expecting this loaf to be heavier and denser than a loaf from my local bakery, but on opening the bag I was shocked, as it was - literally - about half the size I expected for the weight. The only loaves of this texture I have seen previously have been failed attempts at home baking. However we were pleasantly surprised that the bread tasted OK on the first day, with the seeds a pleasant addition, though not to everyone's taste. But by day 2, with the loaf kept in its paper bag in the bread bin, it was unpleasantly stale and not nice even when toasted. A massive disappointment. If I want bread of this quality I can make it myself.
