GAIL's Tiger Top Pain De Mie

Each of our Tiger Top loaves has its own unique and magnificent mottled coat resulting from a tasty glaze of rice flour, olive oil and sugar that naturally cracks as the loaf rises. Enriched with milk and butter, this Pain de Mie style bread is soft, easy to eat and ever so slightly sweet.

About GAIL's
GAIL's believes in the art of honest breadmaking. We start with just four simple ingredients: flour, water, salt and yeast, and we never add artificial colours or flavours. Instead, we seek out the best ingredients from where they're best, whether it's hand-peeled Bramley apples from Britain, single source unsalted butter from France, or plump juicy olives from Mediterranean groves. All our loaves are made by hand too, so we never need to add the stabilisers and preservatives that are an unavoidable fact of industrialised bread.

Our selection of classic and globally-inspired artisanal breads includes a range of sourdoughs made from 15-year old wild yeast starters. Allowed to rise slowly and naturally, these loaves take 48 hours to make and possess a mature taste and character that a mechanically processed loaf couldn't hope to match.

Prepare & Use

Heavenly with a café au lait on a slow Sunday morning, our Tiger Top's sweetness can also be paired with foie gras or smoked salmon.
Children adore it smothered in chocolate spread, jam or lemon curd, while a few stale slices will make a fine bread and butter, or summer pudding.

What a weird loaf!

The 'tiger' in the title is definitely misleading, as if think most people associate tiger bread with that savoury (yeasty) paste that creates the crackled/stripy, slightly chewy crust. This is more like a sweetened Dutch crunch loaf. I didn't find the taste too bad, but it didn't really go with savoury foods and even I (bread addict) don't eat bread for dessert (well, the occasional bread and butter pudding, but I definitely wouldn't use this in it)! The topping/crust was really hard and just flew off at the sight of the bread knife! Won't be buying again.

A perfect Pain de Mie

Absolutely beautiful. This is how Pain de Mie should taste, and those that are rating it poorly for it being too sweet, obviously dont know what they are buying. It is supposed to have a subtly sweetness, hinting at brioche, and the tiger top adds a lovely crunchy texture without being too hard. This bread is a special accompaniment to cheeses, pates and foie gras and simply wonderful toasted. Lasts well for a few days if you can leave it alone for that long!
