Carnaroli - The King of Italian Rices and the preferred choice of the top risotto chefs. An exceptionally creamy, firm and balanced consistency is guaranteed every time. Risotto is a traditional rice meal from the North of Italy.

The Italians love it because:

The Po valley became the renowned region it is today, because of the vision of a great Piedmontese statesman - Camillo Benso di Cavour.
In 1855 he supervised the construction of thousands of miles of canals, thus irrigating one of the most fertile plains in Europe with water from the Alps. Using the same systems, Italian farmers, selected by Riso Gallo, continue to produce rice with the same unique characteristics to provide you with a creamy and velvety wonderful risotto.
The Riso Gallo story
Begins in 1856 in Genoa with a man called Giovanni Battista, and today, some 155 years later, his direct descendants in the sixth generation are still running the business, now located in Robbio Lomellina. Riso Gallo produces rice in the Northern Po Valley, the only authentic risotto rice growing region and the single biggest rice growing area in Europe.
"Riserva 1856" - 1856 is the year in which our story began - this is the king of risotto rice by Riso Gallo, an exceptional quality rice with large, full-bodied grains that encompasses six generations of a passion and culture for rice. It originates from the Lombardy farmhouses, where the organoleptic characteristics of the land and the microclimate are at their most favourable. It is particularly popular with chefs due to the grains' capacity to retain a perfectly cooked "al dente" style, yet binds harmoniously with all ingredients, creating a perfect result.

Perfect Risotto

As an incompetent cook that ought to take out insurance before serving up and who has made many a dire risotto before, this rice and Delia's recipe for baked risotto Carbonara made restaurant, a good restaurant, quality risotto. Superb. Very creamy, very delicious, I was actually asked if I had made it myself from scratch, suspiciously good, someone else had to have had a hand in it, it was concluded.

Makes a lovely creamy risotto!

I usually buy waitrose Arborio rice, but it hasn't been in stock for ages so when my delivery substituted this instead I thought I'd give it a go. Result, yummy risotto and no one could tell the difference! Have bought a few times now and always been happy with how it cooks. Definately recommend.
