Oven cook - From Chilled. The easy-to-cook duck
Here are the details on roasting your Gressingham Duck® from chilled.
Preheat the oven to 220°C, Fan 200°C, Gas Mark 7.
Remove all the packaging. Take the bag of giblets out of the body cavity (they're useful for stock).
Weigh the duck without the giblets. It's important to do this - don't just use the weight on the label, as that includes the giblets.
Place on a rack in a roasting tin, prick the skin all over and rub a teaspoon of salt into the skin.
Roast in the middle of the oven for 20 minutes per 500g, plus 20 minutes extra.
Rest the duck for 10-20 minutes.
All ovens vary in performance, this is a guide only.

Small, expensive but tasty

After packaging and giblets removed, our weighed less than 1kg and fed 2 adults and 2 small children. Would only buy again for a special occasion and on offer.

All skin and bone

So disappointed in this duck. I know a whole duck barely feeds two people but this one was the worst I've ever cooked. Very little meat at all.

Great Duck

This is the 3rd time we have ordered. No complaints - really tasty! Not loads of meat, but then I find that with duck, so tend to buy only when offer. Served two of us for Sunday lunch and then enough left over for hoisin duck noodles - plus a snack for the cats too!

Good Duck

Forgot to take out the bag of giblets. Other than that, fine. Cooked for longer and lower than recommended but covered to keep moist, then drained off the fat for cooking potatoes etc. in and kept off the lid with the oven at 200C for the last 45 minutes, again, for the potatoes. Duck always have less meat on them than the equivalent looking chicken. This one was as expected.

Regular buyer of these Tips for keeping moist

I am ordering another one of these having had quite a few whenever on offer and was a bit taken aback when I saw the reviews as I have never been disappointed. Duck can get tough when it is overcooked and if you put your finger on the breastbone and can feel a gap developing under the skin it will get dry if cooked any more. Cooking upside down for some of the time helps the juices run into the breast and crisps underneath and I always put a whole peeled onion in the cavityand save any oranges or apples that have gone wrinkly to put inside any roast bird as it helps keep moist. Hope this helps
