Lactofree community member Liz Dunning created a recipe for cheesy cauliflower using Lactofree products - the perfect accompaniment to any meal!
The pancetta and lentils are a great classic combination and it works as an alternative side to a summer barbecue or Sunday roast.
Spicy jollof rice is a simple, tasty all-in-one recipe that’s popular in many parts of West Africa. Succulent chicken thighs are browned then cooked in a tomato, chilli and ginger sauce. Then you pop in the basmati rice and cook on a very low heat, adding colourful sliced peppers and okra on top, too. So you can bring one big tasty pot to the table and let everyone dig in!

This makes a great lunch or light dinner and is perfect for al fresco eating. Poaching the chicken ensures it stays really succulent and the ginger gives the dish a bit of lift and zing.

You can’t really go wrong with roasted vegetables. Here we’ve added Puy lentils, some soft cheese and a light mustardy dressing. It makes a wonderfully lush buffet dish, as it won’t wilt or spoil. Photo © Richard Jung
