Coconuts - A great source of nutrition
Coconuts are actually a fruit, not a nut, with a unique combination of nutrients that have made them a staple part of the diet of millions of people living in the tropics.
Coconuts are a rich source of medium chain fatty acids (MCFAs), fatty acids that are more easily digested than fats found in other oils. Around 50% of these MCFA's are made up of lauric acid.
Rich in M.C.F.A.s
Consumption of 'good fats' is an important part of a balanced diet, contributing towards healthy cell function. The fat in coconut contains 60% medium chain fatty acids (MCFAs). Unlike saturated animal fats, MCFAs are not readily stored in the body but are digested and used as energy by the body.

perhaps the best option

This is a winner as it is fortified with calcium and doesn't have a hugely intrusive flavour or sweetness. My 2 sons are allergic/ intolerant to dairy - one can't have soy either so after a lot of trials, I'd say that coconut milk is the best. Rice milk isn't ok for children under 3 due to low level arsenic contamination (true!) Oat milk has a tendency to make everything taste like porridge and it also splits when making rice pudding - we used it for a long time until we discovered koko. Koko has a slight 'creamy' quality to it, which makes it feel a bit more like cow's milk rather than fancy water. It is fine in scrambled eggs and porridge - though I haven't yet tried it in white sauce or for poaching fish, etc. very subtle coconut flavour.

Brilliant find

At the moment I can't have dairy, almond or soya so I was very pleased to discover this. It doesn't have a strong coconut flavour so it's fine to use for the whole family

What is the point ??

Don't waste your money . This product if that is what you choose to call it is 95% water . 95%!!! It tastes of 99% water . I think someone stirred a spoon that had been dipped in coconut milk into this liquid somewhere along the line . Will just buy coconut milk and water it down myself in the future . This is just expensive water .............

Great discovery

I've just discovered this alternative to regular milk and I love love love it! It's not too sweet or perfumed. Tastes good, particularly, when it's cold, and barely smells coconut. Very nice alternative!

Recipes

Cheat's Massaman Curry

Cheat's Massaman Curry

Quick version of a classic Massaman Curry. Massaman curries are cooked all over the Far East, unlike classic Thai green and red curries, which require fresh herbs and spices, the Massman uses a mixture of dried and fresh. The paste can be made up in larger batches and kept in the fridge for a week or frrozen for up to one month. Any meat can be used, chicken, beef, lamb, turkey, pork or duck or make a vegetarian version using a selection of vegetables or tofu. Children usually enjoy pounding the paste, if you're cooking this for children then reduce or leave out the chili.

Sticky Rice with Mango

Sticky Rice with Mango

A classic Thai pudding and a hit with anyone who likes normal rice pudding. This is rice pudding with a twist, the twist being the coconut milk and fresh mango. You'll need to wash and drain the rice 10-20 times until the water runs clear to get rid of the starch - a great job for children. You can substitute granulated sugar for palm sugar but use palm sugar if you can as it has a lovely toffee flavour.
