Coconuts - A great source of nutrition
Coconuts are actually a fruit, not a nut, with a unique combination of nutrients that have made them a staple part of the diet of millions of people living in the tropics.
Coconuts are a rich source of medium chain fatty acids (MCFAs), fatty acids that are more easily digested than fats found in other oils.
Around 50% of these MCFA's are made up of lauric acid.

Rich in M.C.F.A.s
Consumption of 'good fats' is an important part of a balanced diet, contributing towards healthy cell function. The fat in coconut contains 60% medium chain fatty acids (MCFAs). Unlike saturated animal fats, MCFAs are not readily stored in the body but are digested and used as energy by the body.

Beware

May be low in fat, but has 1.9 g per 100 ml of sugars compared to 0.2 g in soya milk. Sucrose ester 'is made by combining sucrose with the fatty acids from palm oil, says Next Generation Food. The amount of fatty acids used depends on what food the sucrose ester is being used in. For example, if it is being used to emulsify a product with an oil-in-water content, such as high-fat mayonnaise, the sucrose ester will be created with a high level, 50 per cent or more, of fatty acids.' Tastes good, however, quite creamy.

Does anything milk can do

Doesn't taste like milk, but it's nice. I've been using it for porridge, works great and gives a tasty coconut edge.

The other reviews say it all. Kara means death to soya, rice, oat milk substitutes.

good in tea or coffee

and cereal - more like cows milk in consistency and effect than rice milk, oat milk or soy. Doesn't taste of much so is easy to use, very nice in cooking, my family like this too - not too chalky like some 'milk's

Cheat's Massaman Curry

Quick version of a classic Massaman Curry. Massaman curries are cooked all over the Far East, unlike classic Thai green and red curries, which require fresh herbs and spices, the Massman uses a mixture of dried and fresh. The paste can be made up in larger batches and kept in the fridge for a week or frrozen for up to one month. Any meat can be used, chicken, beef, lamb, turkey, pork or duck or make a vegetarian version using a selection of vegetables or tofu. Children usually enjoy pounding the paste, if you're cooking this for children then reduce or leave out the chili.

Sticky Rice with Mango

A classic Thai pudding and a hit with anyone who likes normal rice pudding. This is rice pudding with a twist, the twist being the coconut milk and fresh mango. You'll need to wash and drain the rice 10-20 times until the water runs clear to get rid of the starch - a great job for children. You can substitute granulated sugar for palm sugar but use palm sugar if you can as it has a lovely toffee flavour.
