Coconuts - A great source of nutrition
Coconuts are actually a fruit, not a nut, with a unique combination of nutrients that have made them a staple part of the diet of millions of people living in the tropics.
Coconuts are a rich source of medium chain fatty acids (MCFAs), fatty acids that are more easily digested than fats found in other oils.
Around 50% of these MCFA's are made up of lauric acid.

Consumption of 'good fats' is an important part of a balanced diet, contributing towards healthy cell function. The fat in coconut contains 60% medium chain fatty acids (MCFAs). Unlike saturated animal fats, MCFAs are not readily stored in the body but are digested and used as energy by the body.

Very unnatural

Contains 8.4% is coconut diluted with lots of water! Also added chemicals to stabilize it and make it look so white. I found it quite chalky on my throat. That must be the calcium phosphate. I added to my milk and when I finished there was white gooey clump in the bottom of my cup. I think I will make my own coconut milk without the added chemicals in future.

Great milk alternative

Lovely in coffee and cereal. Great for making a hot chocolate. Also lovely to drink on its own. Tastes sweeter than skimmed milk despite having less sugar.

Great Product

I was a bit put off by the thought of coconut milk, but this tastes superb and is much nicer than soya, oat, rice or hemp milks. Very refreshing to drink plain in the hot weather. Good in porridge. As a vegetarian, the only minus for me is the low protein level so I'll have to carry on using soya milk as well in some things but this will be on my list every week now.

Fantastic milk alternative

Tastes just like milk! My husband thought it was milk even though he isn't dairy free! This is the best dairy free milk substitute without a doubt. Very mild, but fresh taste. Excellent product.

have recently gone on the paleo diet and this is a lovely alternative to milk, with coffee and smoothies, and even cooking

Cheat's Massaman Curry

Quick version of a classic Massaman Curry. Massaman curries are cooked all over the Far East, unlike classic Thai green and red curries, which require fresh herbs and spices, the Massman uses a mixture of dried and fresh. The paste can be made up in larger batches and kept in the fridge for a week or frrozen for up to one month. Any meat can be used, chicken, beef, lamb, turkey, pork or duck or make a vegetarian version using a selection of vegetables or tofu. Children usually enjoy pounding the paste, if you're cooking this for children then reduce or leave out the chili.

Sticky Rice with Mango

A classic Thai pudding and a hit with anyone who likes normal rice pudding. This is rice pudding with a twist, the twist being the coconut milk and fresh mango. You'll need to wash and drain the rice 10-20 times until the water runs clear to get rid of the starch - a great job for children. You can substitute granulated sugar for palm sugar but use palm sugar if you can as it has a lovely toffee flavour.
