Rustic apple tart with cider caramel sauce

Preparation time: 15 minutes plus chilling
Cooking time: 25 minutes
Serves 4

175g Leckford Estate plain white flour
75g butter, diced
100g golden granulated sugar
3 Braeburn apples, cored and sliced
Zest of 1 lemon plus 1 tbsp juice
50g sultanas
1/4 tsp ground cinnamon
400ml Leckford Estate cider
2 tbsp crème fraiche

1. Preheat the oven to 200°C, gas mark 6.
2. Place flour, butter and 1 tbsp sugar in a food processor and pulse to make crumbs. Add 50ml water and mix to make a dough. Knead lightly and chill.
3. Roll out the pastry to a 35x25cm rectangle and place on a baking sheet.
4. Mix apples with lemon zest and juice, half the sugar, sultanas and cinnamon and spread over the pastry leaving a 2cm border around the edges. Pinch up the edges to make a rim.
5. Bake for 25 minutes until golden.
6. Meanwhile, boil the cider and remaining sugar for 10 minutes until syrupy. Stir in the crème fraiche and simmer for 1 minute and serve with the tart.

flour mites

I've been buying this flour for quite some time and it's been perfectly fine for baking but I've recently noticed the last couple of bags I've used have had flour mites in them. And usually just the last bit I use. Now, flour doesn't stick around long in my house as we bake a lot but I will not be buying this flour anymore as I don't get mites with any of the other flour I buy.

Very nice flour

This is very nice flour, I use it in all sorts of cakes and sourdough bread along with Leckford strong flour and/or some wholegrain flours. It makes lovely fluffy cakes and pastries and adds softness to my bread. I particularly like the fact it's grown in the UK so hopefully doesn't have the carbon footprint of some other flours.
