"This is – in this country, at least – a sadly under-used root vegetable. Underneath its tough hairy skin, its flesh is creamy and nutty, and its celery flavour is light, which means even those who don’t like celery or anise flavours, seem to love it. Mix it with potatoes or other root vegetables, or just by itself, to make mash, and it’s great in gratins and stews, too.
