Product Description

This is the classic Finocchiona made in the style typical of Greve in Chianti (Tuscany), using fat and lean meat from the belly of the pig, and incorporating a long maturing process in humid, dark cellars. The result is a rich, very fatty, succulent salame as traditional Finocchiona should be. It should not be confused with 'Fennel Salami', as they say, the flavour's in the fat (!) and this demonstrates the authenticity and quality of this product.

Velvety-smooth on the palate, its appearance is rosy and friable, hence the traditional Tuscan name sbriciolona, meaning crumbly (a virtue of that famous fat again). It is seasoned with salt, pepper, Chianti and wild fennel (finocchio) seeds.

In a product like this, the balance of the key flavouring element - in this case fennel - is paramount. If used in excess it becomes overwhelming. It is a balance that can only be achieved by those with great skill, those producers who want the fragrance and flavour of their choice pork to remain clearly perceptible while blending harmoniously with the other aromatic elements that characterise the product.

Prepare & Use

Due to the high fat content the slices can be hard to seperate from the packaging whilst cold. Remove from the fridge well before serving to allow the salame to reach room temperature, this will also improve the flavour.

Like any cured meat it is perfectly fine to eat it on its own, as part of a platter or in a sandwich. Finocchiona however is particularly good as an appetiser paired with vegetables and fruits. Try it with a sliced raw fennel and orange salad with a few pomegranate seeds and even some slivers of parmesan. One of our chefs serves it with shaved raw brussel sprouts and parmesan

Superb

Absolutely delicious, nicely fatty - about 50% fat - with a delicate fennel flavour. Not sure how authentic it is, but it's my family's favourite from the Natoora charcuterie - and that's saying something, as the others are great too.

Where's the fennel flavour

Where is the trademark fennel flavour? I couldn't find it in this finocchiona. It was also so fatty I found it hard to eat.

From an Italian - this is too fatty

I must agree the fat content is too high in this product - in Italy salame finocchiona can vary in fat content but this product has too much fat and not enough meat compared with any finocchiona I have ever enjoyed in Italy - it is my favourite salame so I have tried a few!

Excellent, Incredibly tasty

Yes, it is fatty, that's the point. THe reviews that slate this for being fatty might as well slate Brie or stilton for being fatty. I mean, if it states in the description the flavour is in the fat, you probably are a bit hard of thought to rate it one star for being fatty, no? Really, really tasty. Excellent on the Gail's bread olive stick...
