Product Description
This is the classic Finocchiona made in the style typical of Greve in Chianti (Tuscany), using both fat and lean meat from the belly of the pig, and incorporating a long maturing process in humid, dark cellars.
Velvety-smooth on the palate, its appearance is rosy and friable, hence the traditional Tuscan name sbriciolona, meaning crumbly. It is seasoned with salt, pepper, Chianti and wild fennel (finocchio) seeds.
In a product like this, the balance of the key flavouring element - in this case fennel - is paramount. If used in excess it becomes overwhelming. It is a balance that can only be achieved by those with great skill, those producers who want the fragrance and flavour of their choice pork to remain clearly perceptible while blending harmoniously with the other aromatic elements that characterise the product.

Prepare & Use
Due to the high fat content the slices can be hard to seperate from the packaging whilst cold. Remove from the fridge well before serving to allow the salame to reach room temperature, this will also improve the flavour.
Like any cured meat it is perfectly fine to eat it on its own, as part of a platter or in a sandwich. Finocchiona however is particularly good as an appetiser paired with vegetables and fruits. Try it with a sliced raw fennel and orange salad with a few pomegranate seeds and even some slivers of parmesan. One of our chefs serves it with shaved raw brussel sprouts and parmesan

So fatty - much more than in the photo
This didn't look like the photograph - it was almost entirely fat. The flavour would have been nice, but it was more like eating lardo than salami. Is there no quality control going on at Ocado?

Excessively fatty - very poor quality
This is the fattiest salami I have ever had the misfortune to try and it was so bad that I could not put it on the cold meat platter we had on Saturday. There was virtually no meat content within it. I wonder if it was a bad batch but since it sells at such a high price I am loathe to try it again.

Fatty
Almost 95% fat! This is one of my favourite salamis but I shall never buy it from Ocado again. It had a faint taste but not nearly as strong as it should have been probably because of all the FAT!

too fatty
I wish I read the other reviews before I bought this as it is way too fatty to eat for me. There is more fat than meat

too too fatty
I was so looking forward to sampling this fennel salami, having had some fabulous examples in Sicily. This was however, a huge disappointment. Just looking at it, the balance of meat to fat was 40/60. The taste was 20/80, yuck just fat.
