Prepare & Use
Simple White Rolls
Makes: 8
500g Organic Strong White Bread Flour
7g sachet easy-blend dried yeast
1 1/2 tsp sea salt
175ml tepid milk, plus extra to glaze
175ml tepid water
1 Mix together the flour, yeast and salt. Add the milk and water and mix with a round bladed knife to make a soft dough.
2 Turn out onto a lightly floured surface and knead for 10 minutes until smooth and elastic.
3 Divide the dough into eight, even-sized pieces and shape each into a ball. Flatten slightly and space well apart, on a large, greased baking sheet. Cover with greased cling film and leave to rise until doubled in size, about 45 minutes. Towards the end of proving time, preheat the oven to 220°C, gas mark 7.
4 Brush with milk and dust with extra flour. Bake for 12-15 minutes until risen and pale golden.
Cool on a wire rack. Wrap and store for up to 2 days or freeze for a month.

Makes good bread
We use this in our breadmaker. We have been using a breadmaker for the last 5 years, and are heavy users, making loaves every week. This is nice flour, and I would recommend it for bread machines.

I have tried many but always get good results with this one, and for me it does not need sieving

Consistently Good
I make all my bread by hand; several loaves a week. No other flour is as consistent a performer as this one. It makes tasty bread and, although I have tried other brands when they are on special offer, I would use nothing else. I combine this flour with Waitrose organic strong wholemeal to make my other loaves too.

Great flour - what happened to the bags?
This is lovely flour for both handmade bread and bread-maker but last week I ordered two bags and noticed the bag design had changed - but so, it seems, has the bag - both split badly, one on delivery, and the other after sitting in a cupboard for a few days. So lose a star for the flimsy bag.
