Tasting Notes

Appearance: Classic light gold tint of champagne. A very fine bubble thanks to a prolonged maturation (24 vs. 15 months). Nose: Pear and apple amplified by subtle citrus aromas.. Mouth: Lively with great length in the mouth. A perfectly balanced dosage (11g/1)

Serving Suggestions

Chilled to 8-10. Serve in a champagne fruit or wine glass with a tulip shape for nosing. Always taste a bottle before serving it to ensure it isn't corked.

History

1785 - Create a cuvee worthy of a queen. Inspired by this ambition, Florens Louis Heidsieck founds the house of Piper-Heidsieck in Reims with Marie-Antoinette and the royal courts in mind. Founded in the age of Enlightenment, the elegance and audacity of this great Champagne house led to fourteen Royal courts to choose it as their official Champagne supplier. 1885 - To celebrate Piper- Heidsieck's 100th anniversary, Carl Fabergé designs a bottle of diamonds, white gold and lapis lazulli for the specially created cuvée. 1976 - Extraordinary weather inspires Piper Heidsieck to create the first vintage of Rare. 1985 - To celebrate the 200th anniversary, Van Cleef & Arpels recreate the Fabergé bottle. Valued at $1 million and escorted around the world by armed guards. 2002 - Régis Camus becomes head winemaker. 2006 - Piper- Heidsieck wins Non-Vintage Champagne of the Year IWC. 2012 - Régis Camus wins his 6th IWC Sparkling Winemaker of the Year award (5th in a row.)

Regional Information

Champagne is used exclusively for wines produced in the Champagne region, defined by a 1927 law. 120km wide by 150km North to South. This area represents 34,000 hectares, containing 319 villages in total and is the most northern wine producing region of France. The exceptional terroir, with chalky and acidic soils coupled with a unique climate give Champagne its exclusivity. This region encompasses five main areas - La Montagne de Reims, Vallée de la Marne, Côte des Blancs, Côte de Sézanne, Côte des Bar.

Vinification Details

Grapes typically harvested in mid-Sept, about 100 days after flowering. Picked by hand so that the skins do not get broken. Vines average age in Champagne is 15 years & are most productive between 10-25 years. Harvested grapes are immediately pressed using the traditional coquard basket press. Process is gentle so that the grape juice is not contaminated by the tannins in the skin. First pressing produces 2050L must. Second pressing gives 500L & is more coarse & acidic. Third pressing is not allowed for production of champagne. The juice is clarified for the first fermentation. Fermented in stainless steel tanks. Malolactic fermentation. No battonage. No fining agents. Filtration occurs. The natural sugars in the grape ferment but the carbon dioxide is allowed to escape, producing a still base wine. Piper is now left with a collection of still wines, from which the blends for each cuvée are produced & they may also hold back quantities to use as reserve wines.

Not too dry

I purchased two of these for Xmas Day and was really pleased. One of the nicest Champagnes I have tasted in a long while. Will definately buy it again!
