Fluffy, floury Red King Edwards are great for baking or chipping, and we think they are the best of all varieties we sell for perfect roast potatoes.

You could also make the most of their distinctive ruby coloured skins by simply cutting them into wedges and popping into the oven sprinkled with herbs and spices.

Instructions

Bake
1. Preheat oven to 220ºC / Gas Mark 7.
2. Wash the potatoes well.
3. Dry and prick the skin with a fork.
4. Place directly onto an oven shelf and bake for 1 - 1 1/2 hours or until the skin is crisp and the flesh is tender.

Roast
1. Preheat oven to 220ºC / Gas Mark 7.
2. Peel and wash, then cut the potatoes into even sizes.
3. Parboil for 10 minutes.
4. Drain then shake the pan to roughen the surfaces of the potatoes.
5. Heat 4 tbsp of vegetable oil in a roasting tin. Add the potatoes and turn in the hot oil.
6. Bake on the top shelf of the oven for 45-50 minutes, until golden brown and crispy. Turn occasionally.

Mash
1. Peel and wash, then cut the potatoes into even sizes.
2. Place in a pan with just enough water to cover. (Add salt if desired).
3. Bring to the boil.
4. Cover and simmer for 20-25 minutes or until tender.
5. Drain well and mash with a little butter and milk (or some crème fraiche) together with some freshly ground black pepper.

Wedges
1. Preheat oven to 220ºC / Gas Mark 7.
2. Wash and dry the potatoes but don't peel them.
3. Cut the potatoes into wedges and tip the potatoes onto a baking tray.
4. Add 1 tbsp olive oil and coarse salt and freshly ground black pepper to taste and mix well.
5. Transfer the potatoes to the oven and bake for 30 minutes until golden brown and cooked all the way through.

A fine potato.

Lots of reviews of this product seem to reflect a single (often bad) experience, so here's one to balance them. I've bought these potatoes a number of times , and the quality has always been good. I've not found them to taste significantly different to regular King Edwards though, so you may not want to pay the extra if you don't need red potatoes.

Delicious but patchy quality

These are very tasty potatoes for mashing and roasting, but I've gone back to Maris piper. These potatoes are often full of bruises and deep black patches, meaning you have to excise so much that you lose half the potatoes. They also take a good 35 mins at a low broil to cook through to a good mashing and reasonably loose consistency, compared to 23 minutes for Maris piper.

Tasteless

I needed a floury potato for a potato pancake recipe... King Edward were recommended to be used. Sadly the most tasteless pancakes I've ever made... Didn't realise it was the potatoes until I then used them in a soup the following day... Tasteless potatoes!
