Bouillabaisse Aromatic Fish Stew from Provence

In Provencal kitchens in the past the Bouillabaisse fish stew was described as “a soup for the cove fishermen at the seaside travelling from Marseille to Toulon”. It must first of all be prepared with the basic ingredients of rockfish, vegetables and flavouring. Once this is made the fish are then cooked and then served boiling. The soup is defined by its Provencal Occitan word “bolhabaissa” meaning boiling and simmering. Provencal fishermen then add pieces of cuttlefish, mussels, potatoes and chunks of conger eel.

Empty the contents into a pot and heat without boiling. Serve very hot with garlic croutons or covered in “rouille” (a spicy Provencal sauce accompanying fish).

Very authentic provencal soup

I am sorry to see that others have not liked this and I was a bit tentative seeing that so much of the fish chunks were eel. I agree with the rubbery texture of some of the fish, though I like squid so I was not put off by this. I simply removed the skin in the soup. If the manufacturers wish to make it a more popular product with the British consumer market I suspect that they will need to use more presentable and popular fish, as the modern British consumer is quite different to the French one. However, in its favour,the soup base is the most authentic I have found outside of provence so it gets top marks for that. It is also very tasty with chunks of fresh French bread to mop up the delicious soup.

So different

Obviously individual tastes vary considerably. By comparisson with earlier reviews I and other family members found this product to be very palatable. I am glad that my reading of the other reviews came after eating some, else I might not have tried this excellent stew which will form part of my future orders with Ocado.I have learnt yet again that taste buds are very individually selective. .

Horrid

I agree with anditsin. I made myself eat this, as it was so expensive, but long squid tentacles and slimy fish chunks made me gag. Never again! Sorry - this one aint going to fly off the shelves, in my opinion...

egregious

Large pieces of rubbery tuna-like fish, and semi-dissolved fish with skin on, in a viscous fish soup base. A real disappointment and barely edible. Just terrible.
