Dauphiné Ravioli, Cook for 1 Minute, 2 Servings

Deprived of their usual “ravioli” the Italian lumberjacks who emigrated to the Drome region invented a replacement dish made from turnip leaves filled with soft cheese. This is how ravioli was invented. As it didn’t contain meat, this recipe was initially adopted by the families from the Dauphiné region of France during Lent. As it was enjoyed by many, the recipe was then adapted to include soft wheat flour, eggs, Comté cheese, fromage frais and parsley.

Prepare & Use

The Ravioli should ideally be cooked in a pot with chicken stock (stock cube) or salted water to which you should add a knob of butter or a splash of olive oil (2 litres of water for every 4 servings of ravioli). Bring the water to the boil. Simmer the water gently and place the ravioli into the pan. Leave to cook for one minute on a low heat and stir continuously and gently with a spoon so that the ravioli separate. When the ravioli rise to the surface remove them with a slotted spoon. To preserve the flavour of the ravioli, serve them immediately on a hot plate using an upside down desert bowl to drain off any excess water. Coat in melted butter or crème fraiche to suit your taste, sprinkle with grated cheese of your choice and serve. Bon Appetit

Disappointed

I found the sheets of pasta were difficult to prise apart from the paper sheets wedged between the pasta.So the end results were stringy bits of pasta and messy presentation. .

Top notch

I agree with the other good reviews,but I had problems cooking some which I had frozen & defrosted. I used heston's lobster bisque as a sauce & it was a marriage made in heaven.

Wonderful pasta

Bought this to try based on the Ocado reviews and was ever so pleased I did. The pasta is so delicate with a wonderful flavour and cooks so easily/quickly - perfect for a delicious lunch when in a rush. I added fresh ground pepper, a little butter and a sprinkling of parmesan - parfait!

Gossamer light

Only need about 45 seconds in boiling water make sure you stir constantly to break up the sheet then just dot with a little butter and enjoy. Easily the nicest ravioli I've ever eaten - will definitely be ordering again.
