Dauphiné Ravioli, Cook for 1 Minute, 2 Servings
Deprived of their usual “ravioli” the Italian lumberjacks who emigrated to the Drome region invented a replacement dish made from turnip leaves filled with soft cheese. This is how ravioli was invented. As it didn’t contain meat, this recipe was initially adopted by the families from the Dauphiné region of France during Lent. As it was enjoyed by many, the recipe was then adapted to include soft wheat flour, eggs, Comté cheese, fromage frais and parsley.

Prepare & Use
The Ravioli should ideally be cooked in a pot with chicken stock (stock cube) or salted water to which you should add a knob of butter or a splash of olive oil (2 litres of water for every 4 servings of ravioli). Bring the water to the boil. Simmer the water gently and place the ravioli into the pan. Leave to cook for one minute on a low heat and stir continuously and gently with a spoon so that the ravioli separate. When the ravioli rise to the surface remove them with a slotted spoon. To preserve the flavour of the ravioli, serve them immediately on a hot plate using an upside down desert bowl to drain off any excess water. Coat in melted butter or crème fraiche to suit your taste, sprinkle with grated cheese of your choice and serve. Bon Appetit

Disappointing
They seem to go from raw to overcooked in the blink of an eye, and whilst the product smells strongly of cheese in the packet once cooked they are incredibly bland. Also relatively difficuly to seperate the sheets without tearing them open. Overall I wouldn't recommend them.

Gorgeous Pasta
I loved this pasta and I cooked it correctly. Other reviewers have tried to separate the pieces before cooking when in fact you need to plunge the whole sheets into boiling water and stir to separate. Easy peasy. Yum yum.

Wanted to like but didn't
Love the Reflets de France range, especially the jams, but this product is unnecessarily fiddly to prepare for a disappointing result. There are must better alternative filled pasta style products which are quick, easy and tasty. Sad but true. Avoid this one. Buy the jam.

These are great
Filled pasta is usually horrid. These are lovely but you do, I think, need to cook them in chicken broth and very briefly. They freeze really well and are a lot easier to handle frozen because they are stretchy and sticky when fresh.

impossible to cook
I follwed instructins to the letter but they ended up claggy and filling seeped into the cooking broth. Won't buy again - sorry
