Morteau Smoked Sausage to be Cooked
Since the Gallo-Roman times, the farmers from the Franche-Comté region have given a unique flavour to their cooked meats through original methods for preserving the meats. In fact, after salting, the products are gently smoked in sawdust from the fir trees of the Jura mountains in an enormous wooden pyramid shaped chimney. The natural and generous flavour characterizes this sausage which is a regional culinary delight from Franche-Comté.

Storage
Store between +4˚C and +8˚C.
Prepare & Use
Place the sausage in a pot of simmering water without piercing it to allow it to maintain its flavour. Cook it (without boiling) for approx. 40 mins.
Serving suggestions:
Warm sausage: steamed potatoes and crème fraiche, lentils, split peas, accompaniment to sauerkraut, raclette etc.
Cold sausage: green salad, Comté cheese

Best with potatoes and Cancoillotte
I used to live in Besancon in the Franche Comte region so this was a regular back then. If you haven't tried it before it's really meaty and much firmer than your usual breakfast sausage but not as firm as chorizo. A lovely smoky flavour and great as a main meal. My favourite recipe is to cut potatoes into cubes, toss in olive oil and place this fella on top in the oven, 200c, for about 40 mins. Then spoon on warmed up Cancoillotte cheese which comes from the same range on Ocado.

Delicious & Different
Really yummy sausage, not dissimilar from a frankfurter type but with a really meaty texture & lovely balance of herbs & spices - coriander? I used for a house speciality - red peppers, onions, garlic, parsley & sausage pan fred in olive oil & smoked paprika, topped with eggs, then grated cheese & baked - wonderful rich taste

Delicious!
Rather than boil it, as suggested, I had a look on-line, where I found that it can be cooked in foil in the oven for 1 and a half hours, which I duly did. It was fantastic! It had a lovely crisp skin, which was a lovely texture when eaten cold, as an hors doeuvre, with olives and cheese. I then put the second half in the fridge whence it disappeared via my greedy daughter. Im hiding it next time.

Unbelievably tasty!
Cooked it up as instructed and added some to a pasta with a sharp tomato and black olive sauce and then went to heaven!

Takes you straight back to France
This is delicious and tastes exactly the same as it does in France. Very meaty with a nice smoked flavour, a substantial main course. We boiled the sausage as per the instructions and tossed with fried potatoes, onions and butter and drizzled with Cancoillotte cheese which Ocado also sell. Pop under the grill for five mins until the cheese melts....delicious! Tonight we will be having it with lentils, would be nice in a salad too.
