Reblechon Cheese from Savoie AOP. Made with unpasteurised milk.
“Reblocher” in French means to squeeze the udder a second time. This is what the hill farmers used to do to hide the real quantity of milk produced on the day that the owner came to measure production in order to calculate the amount of tax they owed! They would finish milking after he had gone and produce this raw, creamy and flavoursome cheese.

Excellent cheese
I made Rachel Khoo's mini tartifilettes with this and it was delicious. Great on it's own too!
