Perfect for quince paste

This does NOT have added pectin. It's not jam sugar. It is preserving sugar which works perfectly for fruit which is already high in pectin. It is larger sugar crystals than granulated sugar meaning it dissolves more slowly and is less likely to burn at the bottom of the pan. I used this to make membrillo and it was perfect.

Always read the label!

My fault as I didn't read the label but this is expensive sugar, larger crystals, without pectin. So no help at all with setting marmalade. Jam sugar is the one with pectin added, lesson learned.

Excellent for jam and marmalade

The larger crystals in this sugar mean not only that it dissolves slower than ordinary sugar, but also that the resulting marmalade or jam is visibly clearer and more jewel like - particularly good when giving the preserve as a gift. I always use this. But of course it's expensive so a matter of personal preference.

Not the same as jam sugar

This is not jam sugar which has pectin added to it. It won't make any difference to the set of your jam, that will depend entirely on how much pectin your fruit contains. Preserving sugar has larger crystals than ordinary granulated and so dissolves more slowly with less chance of it burning. Not really necessary if you keep an eye on the pan.

Excellent product

Have used for years to make marmalade and jams. Needs no extra pectin to help set whatever I'm using. Excellent product.
