The base Macabeo, Parellada and Xarel.lo wines used for creating the cava are always made separately. Once they have been de-stemmed the grapes are chilled so as to preserve the precursors of the aromas contained in the skins and to avoid any oxidation. The must is never filtered but always undergoes cold, static clarification. The first fermentation takes place over 30 days at 15ºC, following which the coupage, or blend of the different base wines is created. The wine then undergoes its second fermentation, in bottle, during which the “Saccharomyces cerevisiae bayanus” yeast from Vilarnau’s own collection transforms the wine into cava and raises the alcohol and CO2 content.

Our aim at Vilarnau is make the best cava with as little impact on our planet environment as possible. We make our living from the land, so looking after and nurturing it as best we can is in our DNA. The better we treat the land and our environment, the better the fruit the vines produce will be and the better our cava will be. As a winery we are pioneers in the region in how we calculate our carbon footprint for both the commercial side of the business and the product itself. Our aim is to reduce CO2 emissions and we approach this challenge in three different ways

Regional information
The Garnacha and Pinot Noir grapes used to make this cava are grown in Vilarnau’s own vineyards near our “Vilarnau d’Espiells” winery. The vineyards were certified as fulfilling Organic Viticulture standards in 2015, which implies the highest possible degree of respect for the biodiversity of the local flora and fauna.
Tasting notes
Vilarnau Rosé Delicat Brut Reserva is a pale pink Cava. Very intense, it offers great aromatic complexity. On the nose, it displays the primary aromas that are typical of a delicate rosé cava: the subtleties of violets and roses in combination with ripe red berries: strawberries, raspberries and blueberries. On the palate it is smooth, very creamy, fresh and elegant. Vilarnau Rosé Reserva is the result of many decades of winemaking knowledge and skill from a team who believe passionately in working in harmony with the environment around them.

Vinification details
Upon arrival at the winery the freshly harvested grapes are chilled so as to preserve the aromatic precursors that are found in their skins, as these are what produce the primary aromas that the cava displays later.
The Garnacha and Pinot Noir musts are fermented separately in stainless steel tanks at a controlled 15ºC for 30 days, following which we create the blend and bottle the resulting wine ready to begin the second fermentation, which lasts approximately six weeks and takes place in underground cellars. After the second fermentation has finished the cava remains in contact with the yeast for a minimum of 15 months.
