Good Crust, Good Crumb.
The flour has a silky soft feel to the touch. It makes for an extremely pliable dough when mixed with sufficient water. The flavour develops well if the dough is left to rise overnight at room temperature. When baked, the loaf develops a good crust which is pale in colour. The crumb is on the lean side when flour, yeast, salt and water are the only ingredients. The crumb has an open texture when left to rise overnight, and is then given enough time to rise a second time after the dough has been formed into loaves.

Lovely flour
I use Dan Leppard's minimum-knead method, which calls for a fairly wet dough and this flour is easy to handle and doesn't turn into a sticky clinging mess like some I've used in the past. I often add between 25% and 75% of Marriage's stoneground wholemeal for texture and flavour. The resulting bread is - people tell me - wonderful with good crumb and fantastic high baked crust. I'll never go back to Be-Ro - can I say that?!
