I love this flour

I love this flour, my favourite bakers the crusty loaf uses it and the bread I make tastes as good.

Soft

Like other reviewers I found this made a silky, soft and relatively non-sticky dough, but even after 20 minutes of kneading I didn't have the long gluten strands I normally get with the Waitrose own brand after around 10. Would recommend for soft loaves, rolls and sweetened breads but it didn't work well for pizza as the dough snapped rather than stretched.

Probably the best flour I have used

I have to admit I have only used maybe half a dozen of the usual flours but really this is the best. Whether knocking up a loaf overnight in the bread machine or making the weeks rolls by hand this is wonderful. Add a little more water than for straight white and my 50-50 white and wholemeal are fabulously light with a great taste and my 4 year old asks for them specifically - now there's a plus

Lovely flour

I use Dan Leppard's minimum-knead method, which calls for a fairly wet dough and this flour is easy to handle and doesn't turn into a sticky clinging mess like some I've used in the past. I often add between 25% and 75% of Marriage's stoneground wholemeal for texture and flavour. The resulting bread is - people tell me - wonderful with good crumb and fantastic high baked crust. I'll never go back to Be-Ro - can I say that?!

Good Crust, Good Crumb.

The flour has a silky soft feel to the touch. It makes for an extremely pliable dough when mixed with sufficient water. The flavour develops well if the dough is left to rise overnight at room temperature. When baked, the loaf develops a good crust which is pale in colour. The crumb is on the lean side when flour, yeast, salt and water are the only ingredients. The crumb has an open texture when left to rise overnight, and is then given enough time to rise a second time after the dough has been formed into loaves.
