This classic Tex Mex favourite goes down well for a family supper, you can adjust the seasoning depending on how hot and spicy you like it. 

Younger children can help by cleaning and breaking up the mushrooms into pieces instead of slicing them and using small, round bladed scissors to chop up the pepper instead of using a knife.  Encouraging children to squeeze  the limes and measure out the seasoning works well too.

Older children and teenagers can learn about raw meat; how it feels, and why you need to wash your hands and utensils thoroughly after touching it, by skinning and slicing the chicken breasts. They can also help to stir fry the dish under supervision. Kitchen scissors are a good alternative to knives for slicing raw chicken.

Ingredients

  • 1 tsp sunflower oil
  • 4 chicken breasts, skinned and sliced
  • 3 red onions, sliced
  • 3 red peppers, sliced
  • 2 large flat mushrooms, sliced
  • 4 limes, juiced, plus one extra quartered, to serve
  • 1 tsp chilli powder
  • 1 Pinch salt
  • 8 tortillas
  • 1 tub guacamole, to serve
  • 1 tub salsa, to serve

Method

Step 1

Heat the oil in large, non-stick frying pan or wok, stir fry the chicken slices for approx 5 minutes until almost cooked. If it starts drying out add a little lime juice.

Step 2

Add the onions, peppers and mushrooms and stir fry for another 2-3 minutes.

Step 3

Pour over the lime juice, chilli powder and salt and mix well.

Step 4

Serve with warm tortillas, guacamole and salsa, keep the chicken mix in the frying pan or a large covered bowl to keep hot.
