Arthur's Mulled Wine

Instructions

    Pour the sugar into a large deep frying pan and set on a moderate heat. The sugar will begin to melt. Take care to make sure the sugar doesn't burn and adjust the heat accordingly. Stir the sugar into the melted liquid and when it has caramelised add the spices.

    Add star anise, cloves, cardamom, bay leaves and peppercorns and stir through the liquid. Now add the allspice, a pinch of dried red chilli flakes and half a teaspoon of five spice. Stir into the caramelised sugar.

    Pour in the bottle of red wine and stir to dissolve the sugar. Bring the liquid to a gentle simmer then add the cinnamon stick and follow that by grating in a whole nutmeg.

    Simmer the liquid for half an hour and serve with a lemon wedge.

  • 1 bottle red wine
  • 3 star anise
  • 2 bay leaves
  • 1 tsp white peppercorns
  • 1 tsp cloves
  • 1 tsp cardamom pods
  • 1 tsp allspice
  • 1 whole nutmeg
  • 1 Stick cinnamon
  • 1 Pinch dried red chilli flakes
  • 1 Pinch Mustard Seeds
  • ½ tsp five spice
  • 150g sugar
  • 1 lemon
