Asparagus in Filo Pastry

Preheat the oven to 180ºC/Gas 5. Trim the asparagus by bending each stem near the base until it snaps and discard the thick end. This ensures you only get the most tender part to eat.

Take one sheet of filo pastry and spread a thin layer of the pesto along one edge and then cut it in half. Lay a stem of asparagus on the pesto pastry and roll up, leaving just the tip exposed.

Place on a baking tray. Repeat until all the asparagus is used. Brush with melted butter and bake for 15 -20 minutes until golden and crisp. Cool for 5 minutes before serving.
