Baked Peaches with Marzipan and Almonds

You cannot beat the fresh, fragrant flavour of ripe, baked peaches oozing sweet juices.

Good with crème fraîche.

    Preheat the oven to 200°C (400°F/Gas 6). Cut the peaches in half and remove the stones. Place in an ovenproof dish in a single layer, cut–side upwards. Mash the marzipan with the cream and spoon into the centre of the peaches. Sprinkle over the flaked almonds and drizzle over the honey.

    Sprinkle over the caster sugar, pour over the wine, and bake for 20–25 minutes, or until just tender. Remove from the oven, cover, and leave to stand for 5 minutes.

  • 60g marzipan
  • 2 tbsp double cream
  • 30g flaked almonds
  • 1 tbsp clear honey
  • 2 tbsp golden caster sugar
  • 8 tbsp sweet wine
