Barbecue Spare Ribs

Instructions

    Combine the marinade ingredients in a non-metallic bowl. Add the ribs and coat well with marinade. Cover, chill, and marinate for at least 30 minutes.

    Preheat the oven to 190°C (375°F/Gas 5). Place the ribs in a single layer in a roasting tin. Pour over the sauce. Bake, covered with foil, for 1 hour.

    Baste, then bake, uncovered, for 30 minutes, or until tender. Baste again, then serve with lemon wedges and rosemary sprigs.

  • 2 kg Pork Spare Ribs
  • 2 wedges Lemon, to serve
  • 2 sprigs Rosemary, to garnish
  • 6 tbsp Mango Chutney, sieved
  • 6 tbsp Tomato Ketchup
  • 6 tbsp White Wine Vinegar
  • 4 tbsp Dark Soy Sauce
  • 4 tsp Garlic Purée
  • 2 tbsp Chilli Sauce
  • 2 tsp Paprika
  • 460g Chopped Tomatoes, cans
  • 100g Light Soft Brown Sugar
  • 1 pinch Salt
  • 1 pinch Black Pepper, freshly ground
