This syrup is equally good mixed with sparkling water or champagne for a refreshing summer drink or poured over ice cream, mixed with natural yoghurt or swirled into fairy cake mix. You can whisk it into meringues or dunk bread soldiers into it for a naughty snack. it will keep for up to 2 weeks in the fridge.
Encourage children to top and tail the blackcurrants if you need to keep them occupied for 15 minutes, otherwise don't bother, once you sieve them after cooking they'll take care of themselves.
Place the blackcurrants and 200ml of water in a saucepan and bring to the boil, simmer for 10 minutes, squashing the blackcurrants with a wooden spoon occasionally.
Remove from the heat and press through a sieve, add the sugar whilst the syrup is still warm and stir until all the sugar has dissolved.
Pour into a sterilised screw top jar, cool and keep in the fridge for up to 2 weeks.
