You can kid yourself that these are healthy as they are low fat, but they're not, they are hugely high in sugar but taste amazing, it is a good way of getting a chocolate fix without the fat. Serve these on their own or sandwiched with whipped cream and raspberries, strawberries or blackcurrants. Children can help to separate the eggs, but make sure that not one drop of egg yolk gets into the bowl with the egg whites as they won't mix properly.  Use a mixer for quick results with whisking the egg whites but after that the rest of the mixing can easily be done by hand and by children.

Ingredients

  • 4 Egg Whites
  • 170g Caster Sugar
  • 2 tbsp Good Quality Cocoa Powder
  • 100g Plain Chocolate Chips
  • 1 tub Whipping Cream, to serve
  • 1 Handful Raspberries, to serve

Method

Step 1

Preheat the oven to 180c/gas mark 5.

Step 2

Pour the egg whites into a clean, dry bowl and whisk them with an electric mixer until they form stoft peaks that just tip over a little when you pull the whisk out. If you're brave you can test if they are done by turning the bowl upside down, if the mixture doesn't fall out all over your work surface then they're the right consistency, if it does, you have a mess to clear up and start again.

Step 3

Whisk in the sugar a tablespoon at time, make sure the sugar is whisked in before adding the next one.

Step 4

Line a baking tray with parchment. Sieve the cocoa powder into the egg whites and carefully stir to mix, add the chocolate chips and mix.

Step 5

Place a spoonful of mixture onto the parchment, you should have around 12 blobs.

Step 6

Place into the oven and turn the temperature down to 150c/gas mark 3 and cook for 30 minutes. Then turn off the heat and leave the meringues in the oven for another 30-60 minutes until they are firm to the touch.

Step 7

If you have an aga then cook in the simmering oven for 1 hour, remove the place on the lid of the simmering plate for another hour, make sure the lid is covered before you put the baking tray on it to prevent scratching.
