Chocolate Puddings

A treat for all chocoholics. These simple-to-make puddings bake until a light sponge surrounds a rich, creamy chocolate centre.

Good with softly whipped double cream or hot custard flavoured with grated orange zest.

Leftovers can be coarsely chopped and spooned over vanilla ice cream with hot fudge sauce to make a special sundae.

Prepare Ahead

Steps 1 and 2 can be prepared several hours in advance, ready for popping in the oven at the last minute.


Instructions

    Generously butter the sides and bottom of the moulds. Cut a piece of greaseproof paper to fit in the bottom of each and put in position, then butter. Set aside. Preheat the oven to 200°C (400°F/Gas 6).

    Put the chocolate in a heatproof bowl set over a pan of simmering water, without letting the bowl touch the water, and stir for 5 minutes, or until the chocolate is melted and smooth. Set aside.

    With an electric mixer, beat the butter and sugar until blended and smooth. Beat in the eggs one at a time, beating well after each addition, then add the vanilla. Sift the flour and salt together and gently stir in, then stir in the chocolate. Divide the batter equally between the moulds: the mixture won’t fill them to the tops.

    Put the pudding moulds on a baking tray and bake for 12–15 minutes, or until the sides are set but the centres are still soft when lightly pressed with your fingertips.

    Put an individual serving plate on top of each pudding, then, wearing oven gloves, invert both so the pudding sits on the serving plate. Remove the lining paper. Serve the puddings hot.

  • 250g dark chocolate , chopped
  • 115g caster sugar
  • 4 eggs
  • ½ tsp pure vanilla extract
  • 45g plain flour
  • 1 pinch salt
