Corn and Peppers

Colourful and popular with children, this is a good side dish for everyday meals.

Instructions

    Remove the husks and silks from the corn. Using a sharp knife, cut the corn kernels from the cobs. Break up any kernels that are stuck together.

    In a large saucepan, melt the butter over medium heat. Add the corn, onions, green and red pepper, and 60ml (2fl oz) water. Bring the mixture to the boil and cook, stirring occasionally, for 5 minutes, or until the water has evaporated and the corn is tender. Season to taste with salt and pepper, and serve.

  • 2 tbsp Butter
  • 2 Spring Onions, sliced
  • ½ small Green Pepper, deseeded and diced
  • ½ small Red Pepper, deseeded and diced
  • 1 pinch Salt
  • 1 pinch Black Pepper, freshly ground
