Crêpes with Flambéed Caramel Maple Bananas

Instructions

    Slice the bananas into half inch diagonal slices and toss in some of the lemon juice to prevent them browning.

    Melt the butter over a low heat and pour in the sugar. Stir to melt and allow to thicken, darken and bubble before adding the walnuts and the bananas.

    Pour in 2 tablespoons of the rum. If you want to flambe at this stage, then carefully, light it with a match and shake the pan gently until the flames subside. Don't blow on the flames, they will subside.

    Heat the crepes according to the pack instructions. Serve topped with a pile of the bananas, a generous scoop of ice cream and a drizzle of maple syrup.

  • 1 pack Pancake/Crepes Mix
  • 4 tsp Maple Syrup
  • 50g Walnut Pieces
  • 4 large Bananas
  • 30ml West Indian Rum
  • 100g Caster Sugar
  • 4 scoop Clotted Cream Ice Cream
