Ingredients
- 250g celeriac, cut into matchsticks
- 4 tbsp mayonnaise
- 2 tbsp Dijon mustard
- 2 tbsp crème fraîche
- 1 lemon, juiced
- 2 tsp flat-leaf parsley, roughly chopped
- 200g crab meat, white or mixed
- 10 chicory leaves
- ¼ tsp cayenne pepper
Method
Step 1
Plunge the celeriac into ice-cold water as soon as it is cut and add half the lemon juice.
Step 2
Meanwhile, mix together the mayonnaise, mustard and crème fraîche.
Step 3
Season with salt, pepper and lemon juice.
Step 4
Drain the celeriac and stir into the mustard mayo mix. Stir in the parsley and crab meat.
Step 5
Serve the remoulade in chicory leaves, sprinkled with cayenne pepper.
