A quick, simple and delicious salmon pasta. Use any type of pasta you like, even spaghetti if it is your favourite!

Ingredients

  • 400g pasta
  • 4 sockeye salmon fillets
  • 1 fennel bulb
  • 1 handful fresh parsley
  • 1 handful fresh mint
  • 50g pine nuts
  • 200g creme fraiche
  • 1 splash olive oil
  • 1 bottle dry white wine

Method

Step 1

First of all you'll need to open the bottle of wine and pour yourself a glass! Cooking is always more enjoyable with a tibble to go with it. Make sure you have finely diced your fennel and roughly diced your salmon up. Next, put on a pan of water to boil and add your pasta once the bubbles start to form.

Step 2

Whilst this is happening, splosh your olive oil into the pan. Throw in the fennel and cook it until it is turning golden. Then add the salmon and cook it for just 2-3 minutes and let it reduce to about half. Then stir in your creme fraiche and tear your parsley and mint into the sauce as well. Let the sauce simmer and thicken for 4-5 minutes.

Step 3

Gently stir in your drained pasta with the sauce and sprinkle a few pine nuts over the top. That's it, you're ready to serve! All in the space of about 20 minutes!
