  • 2 traditionally smoked Icelandic haddock fillets (tail end or middle cut), about 150g each
  • 2 tablespoons half-fat crème fraîche
  • 15g fresh chives, snipped
  • 20g butter
  • 150ml whole milk
  • 1 Pinch freshly milled black pepper
  • 1 tablespoon Cooks’ Ingredients Breadcrumbs, for the topping
  • 2 tablespoons grated extra mature Cheddar, for the topping
  • 200g Waitrose Jersey Royal Potatoes, to serve
  • 100g whole leaf spinach, to serve
