Eton mess is best assembled last minute, but it is quick and easy so it won't take long, particularly if the ingredients are well prepared. It is important to whip the cream quite softly as it will thicken a little more as you fold in the other ingredients.Time and servings

Ingredients
- 250 ml of double cream
- 2 tsp of caster sugar, (optional)
- 50 g of meringue, bought or homemade
- 225 g of strawberries, hulled
Method
Step 1
In a mixing bowl, softly whip the cream with the sugar (if using). Crumble over the meringue and fold in gently.Step 2
Mash the strawberries with a fork and stir into the cream and meringue mixture (reserving some strawberries for decorating), then spoon into a glass or bowl to serve.
