French Almond Financiers

So-called because these cakes are said to resemble gold bars.

Instructions

    Preheat the oven to 200°C (400°F/Gas 6). Grease the moulds or cake tin holes well with butter, and dust with flour.

    Mix the almonds, icing sugar, flour, and salt together. Melt the butter, but do not let it get too hot. In a separate, clean bowl, whisk the egg whites until frothy, but not too thick. Add to the almond mixture with the butter and vanilla extract, and fold in.

    Half fill the greased moulds, and bake in the centre of the oven for 10–12 minutes, or until they have risen a little, and are golden and springy to the touch. Allow to cool in the moulds for 5 minutes, then carefully remove and allow to cool completely on a wire rack.

  • 50g Butter, for greasing
  • 30g Plain Flour, extra for dusting
  • 60g Ground Almonds
  • 85g Icing Sugar, sifted
  • 1 pinch Salt
  • 85g Unsalted Butter
  • 3 Egg Whites
  • ½ tsp Pure Vanilla Extract
