Gooey Chocolate Puddings

This typically British pudding is guaranteed to lift you up from the day’s lows. So sit back and indulge in these gooey chocolate puds.

    Preheat your oven to 190ºC and lightly grease 4 ramekins with a little butter. Break the chocolate up and put it in a bowl with the cubed butter. Place the bowl over a pan of simmering water. Turn the heat off and slowly melt. Stir occasionally with a wooden spoon or spatula. If it's slow to melt, heat the water again.

    When it has melted, take the bowl off and heat the water again until simmering. Crack the eggs and yolk into a bowl and add the sugar and vanilla. Place the bowl over the hot water and without the heat on and beat with an electric beater until light and moussey. You want it really thick and it can take up to 10 minutes. If you have an electric mixer you can do this in that.

    Fold in the melted chocolate mix and then the flour. Pour into the greased ramekins and bake for about 8 minutes until just set but with a slight wobble to the middle. Serve immediately dusted with icing sugar and with a dollop of clotted cream.

  • 55g Unsalted Butter, cubed
  • 45g Caster Sugar
  • 170g Chocolate
  • 2 large Eggs
  • 30g Plain Flour
  • 4 tbsp Clotted Cream
  • 4 tsp Icing Sugar
