Grilling fruit on the barbeque couldn't be simpler and served with this simple toffee sauce it's a perfect treat to end the meal.

Ingredients

  • 50g unsalted butter
  • 75g Soft dark brown sugar
  • 8 tablespoons double cream
  • 1 pineapple, peeled, cored and cut into slices lengthways
  • 1 mango, peeled and cut into slices lengthways
  • 6 brioche rolls, split
  • 6 small handful raspberries, to serve
  • 6 scoops ice cream , to serve

Method

Step 1

Cook the butter and sugar over a gentle heat until the sugar has melted, then boil for 5 minutes.

Step 2

Remove from the heat, stir in the cream and set to one side.

Step 3

Place the prepared fruit onto the grill and cook for 2-3 minutes each side.

Step 4

Toast the brioche on the grill

Step 5

To serve place a toasted roll on each plate and top with grilled fruit, toffee sauce, raspberries and ice cream.
