Macaroni Bake with Ham and Peppers
Quick to make and full of rich flavours, this pasta bake makes a satisfying mid-week meal or an informal dinner party dish.
Good with a rocket or spinach side salad.

Prepare Ahead
Prepare up to the end of step 3, then tip the mixture into the dish and top with the breadcrumb mixture. Cool, cover with foil, and chill for up to 8 hours. To serve, bake for 15 minutes, then remove the foil and bake for a further 10–15 minutes, or until thoroughly heated through and golden.

Preheat the oven to 200°C (400°F/Gas 6). Bring a large saucepan of lightly salted water to the boil, then add the macaroni. Simmer for 8–10 minutes, or according to packet instructions, until cooked but still firm to the bite. Drain well.

Meanwhile, heat the oil in a saucepan and fry the onion, garlic, and red pepper over a medium heat, stirring often, for 5 minutes, or until softened but not browned.

Add the tomatoes, ham, wine, and oregano and bring to the boil. Simmer uncovered for a further 2–3 minutes to reduce slightly. Remove from the heat, stir in the macaroni, and season to taste with salt and pepper.

Tip the mixture into an ovenproof dish and spread evenly. Mix the breadcrumbs with the Parmesan and butter, then spread over the top. Place the dish on a baking tray and bake for 15–20 minutes, or until golden and bubbling, then serve at the table in the dish.

- 1 pinch Black Pepper, freshly ground
- 1 tbsp Olive Oil
- 1 Red Onion, thinly sliced
- 1 Garlic Clove, crushed
- 1 Red Pepper, thinly sliced
- 400g Chopped Tomatoes, can
- 250g Smoked Ham, piece, diced
- 3 tbsp Dry White Wine
- 2 tsp Dried Oregano
- 75g White Breadcrumbs, fresh
- 3 tbsp Parmesan Cheese, freshly grated
- 2 tbsp Butter, melted
